I started my training in cooking with my family during my teenage years. They owned a traditional restaurant for decades and taught me the basics of Tuscan cooking. After few years, in 1997, I moved to Africa and Middle East to achieve different cooking styles and started to teach Italian cooking in resorts and hotel chains, mostly owned by Italian tour operators. Back in Italy I turned back to the Tuscan traditional cooking styles, to develop new techniques and combinations of flavors. There I develop a passion for baking, yeast creation and rising technics. During the years I took part to many cooking courses hosted by Michelin starred chefs and specialized in bakery and natural yeast. Nowadays I’m teaching to our guests the basics of Italian cooking, using natural products and ancient methods and having a lot of fun together!

I don’t know who Alain or the contact number we were provided is, but save yourself the hassle and extra money and book directly through Diadema Cooking School!! We were not properly told where to meet and ended up trying to call and text multiple times our host before being directed to the proper address which made us 20 minutes later than everyone else (they wanted to charge us for a taxi ride that was 10 minutes away by foot). I would definitely say booking through EatWith is a scam! It made our experience initially so much less enjoyable and we paid an extra 40€ than the website with Diadema Cooking School advertised. Honestly will never use Eatwith again after this awful experience. The class was nice and enjoyable but it had nothing to do with local individual.
Pizza and Gelato class was great for all! We really enjoyed the evening and our instructors did a great job! The original plan stated we would be picked up from the meeting point and would have an olive oil tasting. We had a 15 min walk to the class. This was a bit of an issue for us due to my father having mobility issues. They did slow down for us, but had we known in advanced we would have arranged alternative transportation for him. Other than that, it was great food and fun.
